Before creating their classic shoyu (soy) or shio (salt) ramen, the chefs at Maruko Japanese Noodle House stew their pork for 10 hours to extract every bit of flavor. They put the same amount of passion into their other ramen flavors, too, mixing homemade chili bean sauce for the spicy miso ramen and marinating barbecue pork overnight for the pork ramen. Each bowl is topped with chopped scallions, cloud ear mushroom, bamboo shoots, half of a hard-boiled egg, and a sheet of dried seaweed; diners can also add butter, kimchi, or a tiny sailboat to the broth.
