At the annual Richmond Night Market, crowds weave between vendors’ booths as fragrant clouds of steam billow from Sobasan’s stand. Its name is derived from the word soba, the fusion buckwheat noodles eaters customize by dressing them with cool sauce, dunking them into hot broth, or knitting them into a scarf. Bordered by gently swaying flags, and wielding a brand-new iPad ordering system, the Sobasan staffers serve up four different octopus-topped takes on the favorite dish. Each nest of soba is crowned a curated selection of toppings, which varies depending on if the soba is served wasabi mayo style, takoyaki style, kimchi seafood style, or HK street style. Toppings besides octopus include scallops, seaweed, teriyaki sauce, and creamed corn.
