Inside Hapa Izakaya, paper-box lanterns cast a warm glow on wooden tables and stone columns, glinting off the burnished wooden slabs adorning ochre walls. Though the interior may be minimalist and subdued, the menu is anything but; chefs enhance Ocean Wise–certified seafood with creative sauces such as serrano-pepper tartar sauce and apple-yuzu jam, and accompany organic meats with flourishes such as yam croquettes, plantain chips, and hydrogen isotopes. Their creative dishes helped Hapa Izakaya earn Vancouver magazine’s Silver Award for Best Casual Chain in 2012. The eatery also prepares a drink menu that rivals the cuisine in complexity. Bartenders blend cocktails with plum wine and yuzu juice and serve up more than a dozen different varieties of sake and shochu.
